Hello! Long time no post. I have rounded up a handful of meals that are little man approved. I hope you enjoy and find inspiration for healthy balanced meals for your little ones!

1. Berries & Mini Eggos
If I let him, my man would live on fruit. This is an easy prep, little mess, Breakfast. We also sometimes add peanut butter to the eggos. He usually has oatmeal for breakfast so this eggos meal breaks up the norm a little and he loves it. He is 16.5 months old so I do still cut any choking hazard foods into smaller pieces.
I prefer steamed veggies most of the year unless we have fresh from the garden so here he had steamed peas, white rice made with low sodium chicken stock and herbs, and shredded baked chicken. I season his chicken with herbs, salt, and pepper.
3. Quinoa & Lentils with Cornbread
This meal is my take on a Southern staple, Soup Beans & Cornbread! I make the quinoa and lentils in the crockpot with equal parts water and low sodium chicken stock. I season them with salt, pepper, onion powder, garlic powder, and my go to herb blend, Mrs. Dash Table Blend. This recipe is surprisingly Hubby (A Southern boy raised on his Mamaw’s soup beans) approved too! The cornbread is embarrassingly from a Jiffy box… maybe someday I’ll take the time to make my own. I do make it in a cast iron skillet, bonus points there right? And lastly, the oven baked breaded pickles I offered him to try for the first time. He loves pickles but is on the fence about breaded pickles.
4. Meatloaf, Mashed Potatos, & Strawberries
This meatloaf is made with 97/3 lean ground beef, finely diced onions, seasonings, and crushed Italian seasoned croutons subbed for the bread crumbs. I love the added flavor they give! My mashed potatoes are a standard butter and milk with herbs recipe, mashed to the right consistency. Sometimes I add shredded cheddar cheese for extra flavor. Plus strawberries of course for my little fruit lover.
5. Mashed Avocado on Toast, Chicken Salad, & Grapes
My little has an on again off again love for avaocado. Currently we’re on! I just mash 1/2 an avocado, season with salt and pepper, spread it on a piece of wheat toast, and cut into bite size pieces. He is capable of taking bites of a whole piece of toast but we’re in a food throwing phase… the bite size pieces help to prevent the whole thing from ending up on the floor. Here I gave him cut green grapes, another choking hazard, and some of my homemade chicken salad. I recently made this recipe for the first time with my Husband’s Mamaw’s pepper and onion relish as an ingredient and we’re loving it! Maybe I’ll do a post on it once I spend a day with her learning her relish recipe. In the meantime though, I make chicken salad with rotisserie chicken from the grocery deli and just shred it instead of using the food processor, it is delicious!
